Coconut Almond Granola with Chocolate Chunks


This granola is addictive! I came up with this simple recipe about a month ago when I wasn't able to go to the store and ever since we don't buy granola any more because this granola is just so yummy! Another added bonus is when it's in the oven it fills your house with the most delicious smell. This Granola is fun to make and is easily customizable to your family's tastes.


Ingredients:

- 4 cups of oats

- 2 cups of maple syrup

- 3 tablespoons of coconut oil (melted)

- 2 teaspoons of vanilla

- 1 teaspoon of salt

- coconut flakes

- Almonds (optional)

- vegan cocchocolateolate chips


Instructions:

Heat your oven to 350 degrees Fahrenheit and prepare a baking tray with a piece of non-stick tinfoil on the bottom. While the oven is heating up get a large mixing bowl, spoon or rubber spatula, and melt your coconut oil. Add all the ingredients into the bowl except for the chocolate chips and stir until the oats and nuts are well coated. Spread the mixture out onto the prepared baking tray and bake for about 20 mins or until the granola is golden brown. Once the granola is golden brown pull it from the oven and allow it to cool before you add the chocolate chips. Store the granola in an airtight jar and enjoy it!
