Banana Nut Muffins

We have all had those last two bananas sitting on our counters that are getting browner by the day. Well, this recipe for banana muffins from Vegan Richa will take care of those lonely looking bananas and create a delightful muffin.

In the original recipe the muffins included coconut and used a blender for the wet ingriedents. In mine, I substituted coconut for mini vegan chocolate chips to add a sweet surprise and did not use the blender. I also took the suggestion for walnuts on the tops of the muffins in place of the streusel.
