Blueberry and Mango Smoothie Bowl


On a hot summer day there is nothing I love more than a cold smoothie bowl topped with fruit and granola. When you make them thick with frozen fruit it tastes like you are eating ice cream for breakfast. Who would not want to eat ice cream for breakfast?


This smoothie bowl was made with frozen blueberries and mango. I topped it with freeze-dried strawberries and my homemade granola. You can also add nut butter or honey to add a little extra protein or sweetness if you like.


Ingredients:

- 1 ripe banana

- 1/4 cup frozen blueberries

- 1 cup frozen mango peices

- non-dairy milk or water

- toppings of your choice


Instructions:

In either a blender or my favorite, a food processer (I have found a food processor can make a much thicker smoothie a lot easier than a blender) add your banana and frozen fruit with just a little bit of non-dairy milk and blend. Keep blending and adjusting the thickness of your smoothie with additional non-dairy milk until it reaches a texture similar to soft-serve ice cream. Grab a bowl and add your smoothie to it. Then add any toppings you like and enjoy!
