Roasted Sweet Potato and Chickpea Salad With Soy Dressing


Salads do not have to be boring. Adding roasted veggies to a salad makes it so much more delicious and the combinations are endless. This salad has roasted sweet potato and crispy chickpeas along with fresh bell pepper and olives. To finish the salad off there is a soy and sesame dressing. It is perfect to be eaten as a main meal or served alongside another dish. The salad is also easy to prepare as it only requires to put veggies in the oven and chop bell pepper.


Ingredients:

For the salad:

-3 sweet potaoes

- 2 cans of chickpeas

- olive oil

- 1 bell pepper

- 1/2 jar of olives

- 1-2 boxes of lettuce

For the dressing:

- 3 tablespoons of soy sauce

- 1 tablespoon of sesame oil

- 1 tablespoon of rice wine vinegar

- 1/2 tablespoon of maple syrup


Instructions:

for the salad:

Preheat your oven to 400 degrees Fahrenheit and prepare 3 baking trays with non-sitck tin foil or baking parchment. While the oven heats, chop your sweet potatoes and drain your cans of chickpeas. take the cut sweet potatoes and in a bowl drizzle some olive oil and stir the potatoes until they are evenly coated in oil. Transfer the cut sweet potatoes onto your baking trays and cook in the oven until golden brown. Take your chickpeas and drizzle olive oil on them, then place them onto the prepared baking tray and pop them into the oven until they are golden brown as well. While the sweet potatoes and chickpeas are in the oven, dice your bell pepper and your olives and set aside along with your lettuce.


For the dressing:

In a small bowl or measuring cup combine your soy sauce, sesame, oil, rice wine vinegar, and maple syrup. Whisk them together and taste to make sure you like it before setting it aside.


Assembly:

Once the sweet potatoes and the chickpeas are roasted, remove them from the oven and let cool slightly. Meanwhile, prepare dishes of lettuce and add the fresh veggies. once the potatoes and chickpeas are cooled add them to your salad and top with the dressing. Enjoy!
