Vegan Lemon Loaf Cake

I made this simple lemon loaf from Best of Vegan as a birthday cake and it turned out delicious. It was fluffy, light, and perfect for summer. The only things I added to this recipe were an easy lemonade soak and fresh violets from the backyard.


Easy Lemonade Soak:

- 4 tablespoons of Sugar

- 2 tablespoons of lemon juice

- 1/2 cup of water


Combine all the ingredients in a measuring cup while you wait for the cake to cool. One cooled poke holes in the top of the cake using a knife or wooden skewer and carefully pour over the lemonade mixture until all the mixture is gone. Then ice the cake and decorate!
